COUNTRY BREAKFAST
2 tsp. melted butter
1/2 pkg. frozen O'Brien hash browns
1 lb. fried drained sausage (I use hot)
1 c. Cheddar cheese, grated
Remaining 1/2 pkg. hash browns
Salt & pepper to taste
1 doz. beaten eggs, poured over all
Layer the preceding ingredients in the order given in a 9 x 13 inch pan. Bake at 350 degrees for 1 hour, or until eggs are set. During the last 5 minutes of baking, add more grated cheese on top. Great served with salsa.
HINT: Can prepare the day before, except for the eggs. Add the eggs right before baking. Great for busy mornings when you have guests.

Making it right now. Amy is taking it into her work for there breakfast (every other week someone brings in something for the office for breakfast). Let you's know how it goes over.
