Mini Beef Loaves

Prep Time: 15 min.
Bake Time: 30 min.

1 can (10 1/4 ounces) Campbell's® Beef Gravy 1/2 cup Pace® Picante Sauce 2 pounds ground beef 2 cups fresh bread crumbs 1 egg, beaten 6 cups hot mashed potatoes
1. Thoroughly mix 1/4 cup gravy, 1/4 cup picante sauce, beef, bread crumbs and egg in a large bowl. Shape the mixture firmly into 6 loaves and place into a large baking pan.

2. Bake at 400°F. for 30 minutes or until the meat loaves are cooked through.

3. Heat the remaining gravy and picante sauce in a 2-quart saucepan over medium-high heat until the mixture is hot and bubbling. Serve the gravy with the meat loaves and potatoes.

Tip: To make the mashed potatoes, in a 6-quart saucepan place 3 pounds potatoes, cut into 1-inch pieces. Add water to cover. Over medium-high heat, heat to a boil. Reduce the heat to medium. Cover and cook for 10 minutes or until the potatoes are tender. Drain. Mash the potatoes with 1 cup milk and 3 tablespoons butter.

Makes: 6 servings.


For a quick side dish, sauté sliced garlic and red pepper flakes with blanched green beans until the beans are just warmed through.
