does it blow any white smoke from the exhaust?   another thing you could look at is your plugs.  this happened to me when i had a bad head gasket on my 91 silverado, but i also ran it for awhile like this.   the gap on  2 of my plugs were almost corroded (not sure if thats the right word to use or not) shut becuase my head gasket was bad between 2 cylinders allowing coolant to enter both cylinders.  you try pulling all your plugs out and seei f anything like that is starting to show.

just an idea but are you getting into any real deep water that would put your motor  partially under water?  this also happened to me with my last motor. not sure if ford motors are set up like this or not but i forgot to put the small bolt in down by the fuel pump.  the one that will hold that metal rod up when u pull the fuel pump off.  anyways water leaked into my motor from bolt hole.

just a few things i could come up with that you could check out

Get a CO2 checker that samples the headspace gasses in your cooling system.  I've diagnosed alot of headgasket issues that had NO white smoke coming from the exhaust.

Sometimes a headgasket will fail in such a way that it acts like a check valve.  It will let exhaust gasses in but not coolant out.   It's also possible for a headgasket to fail from a cooling port to an oil return. This causes the dreaded milky oil yet the engine will run fine.

They are about 50 bucks.  A shop is going to charge you 60-80 bucks to diagnose the headgasket for you.  If you were closer I would let you borrow mine.

If you don't want to spend the money I would just put some head gaskets on it.  I would suggest having the heads magnifluxed to check for cracks.  From what you have described I am about 90% sure you have headgasket issues.

being  stuck in a mud hole,   for long  time  will  let water in around the  seals in motor.    this  can cause  milky  oil.  witch will  wear  out the  brarning  in the  motor.  and cause  oilpresher to drop.  ==dunno

are you losing  anti freeze ?  check your  fan  that mite  be why its overheating.

If you have a way to get this truck to Auburn (near Bay City), I can fix it for a resonable price.  If you want I can give you a quote.  PM me and I'll get the ball rolling.
